Truffle Season Is Here: A Beginner’s Guide to Istria’s Most Famous Ingredient

September 10, 2026

·

There comes a point every year when summer in Istria slowly starts changing. The beaches get quieter, evenings become a little cooler, vineyards are busy with harvest — and suddenly, truffles start appearing on menus everywhere.

If truffles have always been a bit of a mystery to you, you’ve come to the right place. In Istria, they’re much more than a fancy ingredient — and autumn is when the story really begins.

So… What Exactly Is a Truffle?

Truffles are fungi that grow underground, usually around the roots of certain trees. Unlike mushrooms you can simply spot while walking through a forest, truffles stay hidden beneath the soil. That’s where specially trained truffle-hunting dogs come in. They use their incredible sense of smell to locate them underground, while experienced hunters know exactly where and when to search.

Istria is home to both black and white truffles, but autumn brings the star of the show: the prized white truffle, Tuber magnatum Pico. The forests around the Mirna River valley and Motovun are particularly famous for it. So while most visitors look up at Motovun sitting beautifully on top of its hill, locals also know there’s something pretty valuable hiding in the forests below.

How Should You Actually Eat Them?

Here’s our local advice: don’t overcomplicate it. Truffles have such a distinctive aroma that they don’t need twenty other ingredients fighting for attention. You’ll often find them shaved over homemade fuži or pljukanci, paired with eggs in a fritaja, or served with meat.If it’s your first time, choose something simple. Fresh pasta, a creamy sauce and freshly shaved truffle on top is a very good place to start.

And one more thing: if you’ve only ever tried “truffle-flavoured” products, don’t decide whether you like truffles just yet. Fresh truffle is a completely different experience.

Want to See Where They Actually Come From?

Eating truffles is one thing. Finding one yourself — or, more realistically, following a very talented dog who finds one for you — is much more fun. A real truffle hunt takes you into the forest with experienced hunters and their trained dogs, where you’ll learn how truffles are found and why generations of Istrian families have built traditions around them. And naturally, the experience ends the way every good Istrian experience should: with food.

If you’re curious to try it yourself, you can join a truffle hunting and tasting adventure.

Autumn Is When Istria Gets Delicious

Truffle season is just one of the reasons autumn in Istria deserves more attention. The vineyards start changing colour, konobas become extra inviting, local wine starts sounding like an excellent idea and fresh truffles find their way onto menus across the peninsula.

Summer might get most of the attention. But come autumn, Istria has something else up its sleeve. And it smells a lot like truffles.
